Dinner is Served

There seems to be a big mis-conception that if something is healthy, chances are it tastes awful, or at least bland. Well I'm going to put an end to that one recipe at a time.

Tonight, I decided to make Tilapia filets with Cous Cous. My husband has been trying to eat more healthy lately, while still getting adequate protein and carbs (to sustain his workout regiment). Tilapia is a great lean source of protein and cous cous have healthy carbs and hold LOTS of flavor when cooked right.

So first off, you may be like, "what in the world is cous cous?!" instead of you having to google it, like I did the first time I saw it in a recipe, here's a picture of my favorite cous cous brand. 
Ok so lets get down to business and make this meal already!

What will you need?
Tilapia Filets - Roma Tomato - Cous Cous - Olive Oil - Italian Seasoning - Chicken Broth - Veggies (any kind you want)

First off heat the oven to 425 degrees, while the oven is heating up prepare cous cous according to the directions on package- except instead of using water, use chicken stock. (this is one of the key ways to having way more flavor) 
Once the cous cous is cooked , feel free to add any fresh veggies that you'd like. (I used Avocado & tomato)
In a glass baking dish, drizzle the bottom with olive oil and sprinkle lightly with some italian seasoning
Lay the Tilapia filets down and drizzle them with olive oil and sprinkle with a touch of parmesan cheese
Slice a roma tomato into thin slices, and place on top of the filets with italian seasoning (this not only adds flavor but helps the fish to not be dry)
This is what it should look like before it's put in the oven:

Cook in oven for about 15 minutes (or until lightly browned around edges)

Lay the cous cous on each plate, and put the tilapia on top and presto! ... you've got a healthy meal that's packed full of flavor!
